Colorful Roasted Beet Salad
- 3 to 4 medium roasted, diced beet roots (direction in audio)
- A large bunch of mixed greens of your choice
Mix together and drizzle on top:
- 1/4 cup extra-virgin olive oil
- 1 tablespoon sherry vinegar
- 1 teaspoon Dijon mustard
- Pinch of sugar
Sea salt and freshly ground black pepper
Optional additions: feta cheese, chopped walnuts, sliced almonds
